Easy, lean and high protein post training snack when you have a very long commute home.
When you’re starving after your evening training session and don’t want to spend money buying yet another sandwich from the petrol station. These meatballs take 5 min to prep and 12 min to cook in the air fryer. Make them in advance and pack into an air tight container to eat at room temperature as your post training protein snack.
Ingredients (for 2 portions)
- 500g lean 5% beef mince
- 1/2 cup panko breadcrumbs
- 1 egg
- 1/2 teaspoon English mustard
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt & pepper to season
- 2 tablespoons shop-bought BBQ sauce
Method
In a bowl, mix together all of the meatball ingredients, except for the BBQ sauce which is used at the end to coat them.
Roll the meat into balls all the same size so they cook evenly. You should end up with 24 small balls in total.
Place in the basket of your air fryer (my Sputnik holds 12 at a time) and cook at 180 degrees for 12 minutes. Any longer than this and they will become dry.
While still hot, spoon the BBQ sauce over the meatballs and swirl them all around in the sauce so they’re coated evenly.
Pack into an airtight container. Portion some for your post training refuel and save the rest in the fridge for another day.
