Peri Peri Sauce for dipping Prawns

Home made Peri Peri Sauce is punchy and flavoursome, especially knowing there aren’t any nasties involved.

Use to add flavour to your Prawns or Chicken.

Simply cook your protein, baste it with the Peri Peri sauce while cooking, and then when done, use the rest of the sauce for dipping.

Ingredients

  • 1 red pepper
  • 5 cloves of garlic, skin-on
  • 2 red chillies (vary depending on heat strength you prefer)
  • 1 teaspoon paprika
  • 1/2 teaspoon each salt and pepper
  • 2 teaspoon red wine vinegar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon honey
  • 1/2 teaspoon Worcestershire sauce

Method

Preheat the oven to 200 degrees celcius.

Char the red pepper first. I just place this on the flame of my gas hob and keep turning with tongs. Takes about 5 min.

Transfer the pepper onto a baking tray with the garlic cloves, skin-on, and bake in the oven for 5 min.

Remove from the oven, and let it cool slightly. Once cool enough to handle, skin the pepper and remove the seeds and pith.

In a small hand-held blender squeeze the garlic from their skins, and add the red pepper and remainder of sauce ingredients.

Blitz till smooth.

Taste, and adjust with salt & pepper if required.
