Grilled pork loin steaks

Lean meat alternative to steak. Marinated in soy, honey, fresh sage, ginger and garlic.

Ingredients

  • 6 pork loin chops (no bone)
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon freshly grated garlic
  • 1 teaspoon freshly grated ginger
  • Big handful fresh sage leaves, chopped
  • Salt & pepper to season

Method

Plan to make these ahead of time, as the marinade is essential in tenderising the pork. Preferably marinate overnight, but also still delicious if done at least 6-8 hours before. This dish is so easy, you can throw it all together when you’re having breakfast and then forget about it until dinner time.

In a flat dish, add your Soy Sauce, Honey, Garlic, Ginger, Sage and S&P. Mix together. Add the pork and coat the meat evenly on both sides. I then use a fork to give the chops a little stab all over to help the flavours infuse everywhere.

Cover and chill in the fridge until ready to cook.

Remember to take the meat out of the fridge at least 30min before grilling, so it’s room temperature when you’re cooking it.

We braai (BBQ) these either on the gas braai or traditional coal/wood fire for added smokiness, but you can also grill them in your oven or use a griddle pan. If using a griddle pan, keep a close eye as the marinade can burn quickly.

Tip for cooking the meat: these thin loin steaks cook super fast – stay by your meat, and anticipate under- vs overcooking them so you don’t overdo it.

Serve with veggies and my fake potato dauphinoise for a lean protein meal.
