Easy home made BBQ beans

Pinto beans have a great protein content. This easy home made BBQ bean recipe is ready in 20min.

Ingredients

  • 1 tin Pinto Beans, drained and rinsed
  • Half an onion, diced
  • 1 tablespoon light olive oil
  • 1 cup vegetable stock
  • 4 tablespoons BBQ sauce (choose the type you cook with, vs use as a condiment)
  • salt & pepper to season

Method

Drain and rinse your beans, and set aside. (Note: you can use dried beans, if you have time to prepare them. I find the tinned beans just as good, and much less effort)

Heat your oil in a saucepan, and add the onions. Cook slowly to caramelise (about 5-7min).

Add the vegetable stock, and cook another 5-7 min to reduce liquid volume by half.

Add your beans, BBQ sauce and seasoning. Simmer on a very low heat for 20 minutes.
