Herbed Potato Wedges

Tasty and crispy potato wedges flavoured with spices and fresh herbs. Perfect accompaniment to your protein of choice.

Ingredients

  • 5 to 6 potatoes depending on size (enough to feed 4 people)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoky paprika
  • Salt & pepper (be generous!)
  • 2 sticks of fresh oregano
  • small handful (4-5 sticks) of fresh thyme
  • 1 tablespoon light olive oil

Method

Wash and scrub the potatoes, and leave the skins on. Slice them into wedges.

Place the wedges in a bowl, and add the powders, paprika, seasoning and oil. Mix well.

Lay the herb sticks on a baking tray, and scatter the wedges over the top.

Bake in the oven at 180 degrees celsius for about 20 minutes, or until crispy. Turn the wedges over half way through cooking.

Delicious eaten with Air Fryer Harissa Salmon or Healthy Grilled Chicken Breasts.
